Brazil Fazenda “Cachoeira da Grama

The oldest bourbon trees growing on the “Cachoeira da Grama” fazenda are a staggering 107 years old. Since 1890, it has belonged to the Carvalho Dias family, who grow their coffees here at an altitude of 1,100-1,500 meters above sea level in the Mogiana region of São Paolo state. The fertile area is located between São Paulo and Minas and is named after the Companhia Mogiana Estrada de Ferro railroad line, which transported coffee from the many plantations as early as 1882. No wonder, then, that some of the oldest coffee farms in Brazil are located here today.

Tip:
For all milk drinks, we recommend 3.5-3.8% fresh whole milk, with many alternatives to cow’s milk available: Oat milk, soy milk, almond milk, cereal milk or rice milk.The taste of a cappuccino naturally changes with the type of milk, so you should try out for yourself which of the aforementioned types of milk you use.

Fazenda Cachoeira – which translates as Waterfall Farm – is managed by Gabriel de Carvalho Dias. It extends over 417 hectares, of which 165 hectares are reserved for coffee. Almost all tasks on the farm are done by hand, as the steep topography of the farm makes the use of machinery impossible.

The bourbon variety were therefore hand-picked, collected on a tarp and prepared using the Brazilian “pulped natural” process. The dry mill is located near the spa town of Poços de Caldas in Minas Gerais, 45 minutes from the farm.

The farm attaches great importance to social and environmental sustainability. It is therefore supplied by its own small hydropower plant and only purchases additional energy during peak harvest periods. Wastewater is fully treated to prevent pollution of the stream flowing through the farm.

There is also an active reforestation program to re-cultivate native species. Most employees are housed on-site at the farm. There are 47 houses for the employees and their families – in addition, there is a school, a clubhouse and a soccer field for the employees and their families on the premises.
